Deliciously rich chocolate truffles made with just three ingredients: chocolate, cream, and vanilla. Perfect for sharing or gifting.

  • 8 ounces (225g) High-Quality Semi-Sweet or Bittersweet Chocolate
  • 2/3 cup (160ml) Heavy Whipping Cream
  • 1 teaspoon Pure Vanilla Extract
  • Unsweetened Cocoa Powder for rolling (optional)

Instructions

  1. Finely chop the chocolate and place it in a medium-sized heat-proof bowl.
  2. Heat the heavy cream in a small saucepan over medium heat until it simmers, avoiding boiling.
  3. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes without stirring.
  4. Add the vanilla extract and stir from the center outward until smooth and glossy.
  5. Cover the ganache with plastic wrap and chill in the refrigerator for 1 to 2 hours until firm.
  6. Use a small cookie scoop to portion out the ganache and roll into smooth balls.
  7. Roll the truffles in cocoa powder until fully coated, then place on a parchment-lined baking sheet.
  8. Chill for another 30 minutes if a firmer texture is preferred before serving.
