A simple yet exquisite lemon chicken dish with a crispy Parmesan crust, perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • 1/4 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Dredge each breast in flour, ensuring it’s well coated.
  3. Next, coat the chicken in the grated Parmesan cheese.
  4. In a large skillet, melt the butter over medium-high heat.
  5. Add the chicken breasts to the skillet and cook for about 6 minutes on each side, or until they are cooked through and have a beautiful golden brown crust.
  6. Remove the chicken from the skillet and set it aside.
  7. In the same skillet, add the minced garlic, cooking it until fragrant.
  8. Pour in the lemon juice and chicken broth while scraping up any flavorful browned bits from the bottom of the pan.
  9. Return the cooked chicken to the skillet, allowing it to soak up the delicious sauce.
  10. Finally, garnish with fresh parsley before serving.

Notes

For extra flavor, marinate the chicken in lemon juice for 30 minutes. You can also substitute chicken with eggplant for a vegetarian option.
