  • 4 salmon fillets (about 6 ounces each), skin-on or skinless
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, thinly sliced (drained if packed in oil)
  • 1/2 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1 teaspoon lemon zest, plus lemon wedges to serve (optional)
  • Fresh basil, sliced, for garnish

Instructions

  1. Pat the salmon dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the salmon for about 3-4 minutes on each side until golden brown. Transfer to a plate.
  3. Lower the heat to medium and add butter to the skillet. Sauté minced garlic for 30-60 seconds until fragrant.
  4. Add sun-dried tomatoes and cook for 1-2 minutes to infuse the butter.
  5. Pour in chicken broth and simmer quickly. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes, whisking the mixture and simmering for 2-3 minutes until slightly thickened.
  6. If using, mix in lemon zest.
  7. Return the salmon to the skillet, spoon sauce over top, and simmer on medium-low for an additional 3-5 minutes, aiming for an internal temperature of 125-130°F.
  8. Garnish with fresh basil and serve over pasta, rice, or potatoes with extra sauce and lemon wedges on the side.

Notes

Serve with a fresh green salad or roasted vegetables. Store leftovers in an airtight container for up to three days and reheat gently in a skillet.
