A simple and healthy recipe for delicious date caramels made with natural ingredients.

  • 1 cup packed medjool dates, pitted
  • 2 tablespoons creamy almond butter (or any nut/seed butter)
  • 1 tablespoon coconut oil, melted
  • 1 cup chocolate chips (or an 8-ounce chocolate bar)
  • 2 teaspoons coconut oil, melted (for chocolate coating)

Instructions

  1. Soak the dates in a bowl of very hot water for 10 minutes. Drain and transfer to a food processor.
  2. Add almond butter and coconut oil to the dates, pulse until smooth.
  3. Transfer to a lined loaf pan and freeze for 2-3 hours until firm.
  4. Lift from the pan and slice into 12 squares.
  5. Melt chocolate chips and 2 teaspoons of coconut oil in a bowl.
  6. Dip each caramel square in chocolate, then place on parchment-lined plate.
  7. Refrigerate for 1 hour until chocolate hardens.

Notes

Use high-quality medjool dates for best results. Customize with different nut butters or toppings.
