Cozy, spiced bar cake filled with crisp apple pieces and crunchy pecans, perfect for fall gatherings.

  • 1 cup unsalted butter (melted)
  • 1 ½ cups brown sugar (light or dark)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (substitute 1:1 GF flour mix for gluten-free)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 ½ cups diced apples (about 2 medium apples, such as Granny Smith or Honeycrisp)
  • 1 cup chopped pecans (or walnuts)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Melt the butter in a microwave-safe bowl or on the stove. Stir in the brown sugar until smooth and slightly glossy.
  3. Whisk the eggs and vanilla into the butter-sugar mixture until well combined and slightly fluffy.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients in two batches, stirring gently until just combined. Do not overmix.
  6. Fold in the diced apples and chopped pecans until evenly distributed.
  7. Pour the batter into the prepared pan and spread it into an even layer.
  8. Bake for 25–30 minutes, until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let cool on a wire rack before cutting into squares. Serve warm or at room temperature.

Notes

To keep apple pieces from sinking, toss them in a tablespoon of flour before adding to the batter. For a lower-sugar option, use 1 cup brown sugar plus ¼ cup applesauce and reduce baking time slightly.
