  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt or sour cream
  • 2 cups peeled and diced apples (such as Granny Smith)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt together.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla and yogurt, mixing well.
  5. Gradually incorporate the dry ingredients, stirring until just combined.
  6. Fold in the diced apples and nuts, if using.
  7. Pour the batter into your prepared loaf pan and smooth the top.
  8. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Wrap the loaf tightly in plastic wrap for freshness; it can be kept at room temperature for up to three days or frozen for longer storage.
