Ingredients

Scale
  • 2 packs Pillsbury Grands cinnamon rolls (5 count)
  • Butter for greasing muffin tin
  • 4 large apples (2 Honeycrisp and 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 2 tbsp cornstarch (dissolved in 3 tbsp water)
  • 5 tbsp butter (partially melted)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup melted butter
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla
  • 1/21 tsp cinnamon (based on your preference)

Instructions

  1. Preheat oven to 400 degrees. Grease each muffin cup with softened butter.
  2. Press cinnamon rolls into each muffin cup, spreading them up the sides to create a cavity for the apple filling.
  3. Peel, slice and dice the apples into 1" pieces. Mix with the remaining filling ingredients in a bowl.
  4. Heat the mixture in the microwave for about 2 minutes until thickened. Alternatively, use a saucepan on the stove.
  5. Use a slotted spoon to fill the cinnamon roll cavity with the apple mixture.
  6. Mix streusel topping ingredients until they form crumbs and place mounds on top of the apple filling.
  7. Bake for 15 minutes, loosely covering with foil for the first 5 minutes.
  8. Whisk the icing ingredients until smooth. Allow rolls to cool for 5-10 minutes before drizzling icing on top.

Notes
