A quick and delightful dish of creamy Italian Carbonara featuring spaghetti, pancetta, and egg yolks, perfect for weeknight dinners.

  • 200g spaghetti
  • 100g pancetta
  • 2 large egg yolks
  • 50g Parmesan cheese, grated
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. In a large skillet, cook the pancetta over medium heat until crispy and golden brown.
  3. In a mixing bowl, whisk together the egg yolks, grated Parmesan, and a pinch of salt and pepper until well combined.
  4. Once the spaghetti is cooked, reserve a cup of pasta water, then drain the noodles, keeping them hot.
  5. Add the drained spaghetti to the skillet with the crispy pancetta and remove the skillet from heat.
  6. Quickly pour in the egg and cheese mixture, stirring vigorously to create a creamy sauce, adding reserved pasta water as needed for desired creaminess.
  7. Serve immediately, topping with extra Parmesan and a sprinkle of parsley if desired.

Notes

Make sure to use high-quality eggs and cheese to maximize flavor. Feel free to customize with peas or a pinch of red pepper flakes for heat.
