Authentic Carbonara

A classic Italian dish featuring creamy sauce, crispy pancetta, and al dente spaghetti, perfect for a quick and indulgent dinner.

Ingredients

  • 200g Pancetta, diced
  • 4 Egg Yolks
  • 100g Parmesan Cheese, grated
  • 300g Spaghetti
  • Freshly Ground Black Pepper, to taste
  • 1 tbsp Olive Oil

Instructions

  1. Cook the spaghetti until al dente according to package instructions.
  2. In a skillet over medium heat, add olive oil and cook the pancetta until golden and crispy (3-4 minutes).
  3. In a bowl, whisk together the egg yolks and grated Parmesan cheese.
  4. Drain the spaghetti, reserving a cup of pasta water, and add hot pasta to the skillet with the pancetta.
  5. Off the heat, mix in the egg yolk mixture, stirring vigorously. If the sauce is too thick, add pasta water to reach desired consistency.
  6. Serve immediately, topped with freshly cracked black pepper and extra Parmesan.

Notes

Store leftovers in an airtight container in the fridge for up to two days. Reheat gently with a splash of water or olive oil.
