  • 4 cups fresh spinach
  • 3 cloves garlic, minced
  • 12 oz three-cheese tortellini
  • 1 cup cream
  • 4 cups chicken or vegetable broth
  • 1 lb sausage (Italian recommended)
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped garlic and diced sweet potatoes; sauté until softened.
  3. Incorporate the sausage, cooking until it’s beautifully browned.
  4. Add the fresh spinach, stirring until it wilts down.
  5. Toss in the three-cheese tortellini, cream, and broth, and bring everything to a boil.
