Juicy baked BBQ chicken with a smoky-spiced rub and a glossy layer of barbecue sauce, perfect for busy weeknights.

Ingredients

  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 cup BBQ sauce (plus extra for serving)

Instructions

  1. Preheat the oven to 400°F. Prepare a baking tray with non-stick spray or line it with foil.
  2. In a small bowl, combine the chili powder, smoked paprika, garlic powder, onion powder, sea salt, and black pepper.
  3. Pat the chicken dry with paper towels and rub the spice mixture over both sides of each piece.
  4. Place the chicken on the tray and bake uncovered for 20 minutes.
  5. Remove the tray and brush the chicken with half of the BBQ sauce. Return to the oven and bake for an additional 5 to 10 minutes until cooked through.
  6. Let the chicken rest for about 5 minutes before slicing.

Notes

Use thighs for a richer flavor. Don’t skip the resting step for juiciness.
