A delectable dish featuring tender chicken breasts enveloped in a creamy, rich cream cheese sauce, perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 8 oz cream cheese (softened)
  • 1 tbsp fresh chives (chopped)
  • 1 tsp paprika
  • Salt and pepper (to taste)
  • 1/2 cup shredded sharp cheddar cheese (optional, for topping)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season both sides of the chicken breasts with salt, pepper, and paprika.
  3. In a skillet, heat olive oil over medium heat and sear the chicken for 2-3 minutes per side until golden brown.
  4. Remove the chicken and set aside. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  5. Stir in chicken broth and let simmer for 1-2 minutes.
  6. Add softened cream cheese and stir until smooth. Mix in chives and season with salt and pepper.
  7. Place seared chicken in the baking dish and pour cream cheese mixture over the top. Add shredded cheddar cheese if desired.
  8. Bake uncovered for 25-30 minutes, or until the chicken’s internal temperature reaches 165°F (74°C). Broil for the last 2-3 minutes if using cheese.
  9. Garnish with fresh parsley before serving and enjoy warm.

Notes

Great to pair with roasted vegetables or rice. Can be stored in the refrigerator for 3-4 days.
