Banana Pudding Cupcakes

Delicious banana pudding flavors in a soft cupcake topped with pastry cream and whipped cream.

Ingredients

  • 1 box vanilla cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 24 vanilla wafer cookies
  • 2 cups vanilla pastry cream
  • 2 ripe bananas, sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine cake mix, water, vegetable oil, and eggs. Beat until smooth.
  3. Place one vanilla wafer cookie at the bottom of each cupcake liner.
  4. Fill the cupcake liners with the cake batter until they are about 2/3 full.
  5. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool.
  6. Once cooled, layer vanilla pastry cream on top of each cupcake.
  7. Add fresh banana slices on top of the pastry cream.
  8. In a separate bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
  9. Pipe or spread whipped cream over the banana slices.
  10. Serve and enjoy your banana pudding cupcakes!

Notes

For extra flavor, consider using crushed vanilla wafers as a topping and ensure whipped cream is chilled before whipping.
