A hearty family meal combining sticky honey BBQ chicken and creamy cheesy garlic potatoes, making for a comfort food favorite.

  • 4 chicken breasts
  • 1 cup Honey BBQ sauce
  • 2 lbs potatoes (Russet or Yukon Gold)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons garlic, minced
  • 3 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your grill to medium heat (about 350 to 400°F) or the oven to 375°F (190°C).
  2. Pat the chicken breasts dry, season with salt and pepper, and brush each breast with Honey BBQ sauce.
  3. Grill or bake the chicken for 6 to 8 minutes per side, checking for an internal temperature of 165°F (74°C). Let rest for 4 to 5 minutes before slicing.
  4. Wash and dice the potatoes into 1-inch pieces, cover with cold water, bring to a boil, and simmer until tender (about 15 to 20 minutes).
  5. Drain the potatoes and return to the pot over low heat for 30 seconds to evaporate moisture. Add butter, garlic, cheese, salt, and pepper, and mash until smooth and creamy.
  6. Serve the Honey BBQ chicken hot with a scoop of cheesy garlic potatoes, garnished with parsley and extra BBQ sauce if desired.

Notes

Use Yukon Gold for creamier mash or sharp cheddar for a sharper bite. Adding Parmesan can enhance flavor.
