  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In another bowl, beat the softened butter and brown sugar until smooth.
  4. Add molasses, egg, and vanilla; mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  6. Roll the dough into small balls, then roll in granulated sugar.
  7. Place on a baking sheet lined with parchment paper.
  8. Bake for 8-10 minutes until edges are firm.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to a week. You can freeze them for up to three months.
