  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons aluminum-free baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups milk (any)
  • 1 egg
  • 3 tablespoons butter (melted)
  • 2 teaspoons vanilla extract (optional)

Instructions

  1. In a large bowl, mix the flour, baking powder, salt, and sugar.
  2. In another bowl, whisk the milk and egg together. Then mix in the melted butter and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined, leaving a few lumps.
  4. Heat a non-stick skillet over medium heat, greasing lightly if needed.
  5. Pour about 1/4 cup of batter per pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and brown the other side, about 1-2 minutes each side.
  7. Serve warm with your favorite toppings.

Notes

For fluffier pancakes, don’t overmix the batter and allow it to rest for a few minutes before cooking.
