A simple yet delicious recipe for soft, fluffy pancakes perfect for breakfast or brunch.

  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons aluminum-free baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups milk (any)
  • 1 egg
  • 3 tablespoons butter (melted)
  • 2 teaspoons vanilla extract (optional)

Instructions

  1. In a large bowl, mix the flour, baking powder, salt, and sugar.
  2. In another bowl, whisk the milk and egg together. Then, mix in the melted butter and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Don’t overmix; it’s okay if there are some lumps.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease if needed.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and brown the other side, about 1-2 minutes each side.
  7. Serve warm with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
