Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter

  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 1 tablespoon lemon juice

Instructions

  1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, combine milk, egg, melted butter, vanilla extract, lemon zest, and lemon juice.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Gently fold in the fresh blueberries.
  5. Preheat a non-stick skillet over medium heat.
  6. Drop tablespoonfuls of the batter onto the skillet, cooking until bubbles appear on the surface, then flip and cook until golden brown.
  7. Serve warm with maple syrup or your favorite toppings.
