A delicious dessert featuring a balance of juicy blueberries and sweet peaches topped with a crunchy, buttery oat crumble.

  • 2 cups blueberries
  • 2 1/2 cups peeled and sliced peaches (56 peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter (diced)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and 1/4 cup of flour. Gently toss until the fruit is well coated and let sit.
  3. In another large bowl, combine the remaining 1/2 cup of flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Stir together.
  4. Mix in the diced cold butter with your fingers until the mixture resembles big crumbles.
  5. Place the fruit mixture in a 2-quart baking dish and top evenly with the crumble mixture.
  6. Bake for 40-45 minutes, until the topping is golden brown and the juices are bubbly.
  7. Serve warm or at room temperature, preferably with vanilla ice cream.

Notes

Use ripe, fresh fruits for the best flavor. Leftovers can be stored in the refrigerator for up to three days and can be frozen for later enjoyment.
