Deliciously crispy breakfast potatoes that are quick to prepare and perfect for brunch or as a side dish.

Ingredients

Scale
  • 4 potatoes, cut into 1/2” cubes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tbsp butter
  • 1 tbsp oil
  • 1 tbsp chopped parsley

Instructions

  1. Cut the potatoes into uniform 1/2″ cubes and rinse them to remove excess starch.
  2. Heat a large skillet over medium-high heat until hot.
  3. Add 1 tbsp butter and 1 tbsp oil to the skillet and swirl to combine and melt the butter.
  4. Add the potatoes in a single layer if possible and toss to coat in the butter-oil mixture.
  5. Sprinkle with salt, black pepper, garlic powder, and onion powder. Stir briefly to distribute.
  6. Cover and steam for 3–4 minutes.
  7. Remove the lid and cook uncovered, stirring every couple of minutes until they are tender and lightly golden, about 6–10 minutes.
  8. Remove from heat and sprinkle with chopped parsley before serving.

Notes

You can keep the skins on for added texture and nutrition. For extra crispiness, try smaller cubes or parboiling briefly.
