Broccoli Chicken Rice Casserole

A comforting casserole combining tender chicken, broccoli, and creamy rice, perfect for busy weeknights.

Ingredients

  • 2 tablespoons butter
  • 2 boneless skinless chicken breasts or 2 cups rotisserie chicken
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • 2½ cups chicken broth
  • 1 tablespoon olive oil
  • 1¼ cups white long grain rice
  • 23 cups broccoli florets
  • 10.5 oz cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • ½ tsp dried thyme (optional)
  • ½ tsp garlic powder (optional)
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons melted butter

Instructions

  1. Brown the chicken in butter; set aside.
  2. Add chicken broth, olive oil, and rice to the pan and simmer for 6 minutes.
  3. Add broccoli and cook for 9 more minutes.
  4. Remove from heat and let sit covered for 10 minutes.
  5. Stir in chicken, cream of chicken soup, milk, sour cream, and half of the cheese.
  6. Transfer to a baking dish, top with remaining cheese, and bake covered for 15 minutes.
  7. Add crushed Ritz crackers on top and bake uncovered for 10 more minutes.
  8. Let cool slightly before serving.

Notes

For the best results, use fresh broccoli florets and try adding spices according to your taste.
