Delightful cookies combining the nutty richness of brown butter with chewy mini marshmallows and crunchy Rice Krispies, perfect for any occasion.

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups Rice Krispies cereal
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt the butter over medium heat until golden brown and nutty. Let it cool slightly.
  3. In a mixing bowl, combine the browned butter, brown sugar, and granulated sugar. Mix until smooth, then add vanilla extract and egg, blending well.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
  5. Fold in the Rice Krispies and mini marshmallows gently.
  6. Drop spoonfuls of the dough onto a lined baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
