A delightful dessert combining chewy brownie base topped with creamy frosting and fresh fruits.

  • 1 box (18-ounce) brownie mix (plus ingredients listed on the box, typically eggs, oil, and water)
  • Cooking spray or parchment paper
  • 8 ounces cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Assorted fresh fruits (such as strawberries, blueberries, raspberries, kiwi, and grapes, washed and sliced)
  • 1/4 cup apricot preserves or fruit jelly (melted, optional for glaze)
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat your oven according to the instructions on the brownie mix box. Prepare the brownie batter according to the package instructions.
  2. Line a round pizza pan or baking sheet with parchment paper or lightly coat with cooking spray. Spread the brownie batter evenly onto the prepared pan.
  3. Bake the brownie crust in the preheated oven according to the package instructions, typically 20-25 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool completely on a wire rack.
  4. In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, continue to beat until well combined and fluffy. Set aside.
  5. Once the brownie crust has cooled completely, spread the prepared cream cheese frosting evenly over the surface, leaving a small border around the edges.
  6. Decoratively arrange the sliced fresh fruits on top of the cream cheese frosting, covering the entire surface of the pizza.
  7. If desired, brush the melted apricot preserves or fruit jelly over the arranged fruits.
  8. Refrigerate the brownie fruit pizza for at least 1 hour to allow the frosting to set. Before serving, garnish with mint leaves if desired. Slice into wedges or squares and serve chilled.

Notes

Best enjoyed fresh; store in an airtight container for up to three days. Allow brownie to cool completely before adding frosting.
