  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch or blue cheese dressing
  • 1/4 cup thinly sliced green onions
  • Optional: sliced avocado for topping

Instructions

  1. In a small bowl, mix the hot sauce and melted butter to prepare the buffalo sauce. Set it aside.
  2. Heat olive oil in a large skillet over medium-high.
  3. Add the chicken pieces, seasoning them with salt and pepper. Cook for about 5-7 minutes until the chicken is cooked through and golden brown.
  4. Lower the heat and pour the buffalo sauce over the chicken. Stir well to coat each piece and allow it to simmer for 3-5 minutes for the flavors to meld.
  5. Begin assembling your bowls by placing a generous scoop of cooked rice in each.
  6. Top the rice with buffalo chicken, followed by shredded lettuce and halved cherry tomatoes.
  7. Sprinkle with shredded cheddar cheese and drizzle with your choice of ranch or blue cheese dressing.
  8. Garnish with thinly sliced green onions, and if desired, add avocado slices for additional creaminess.
  9. Serve your Buffalo Chicken Bowls immediately while everything is warm and vibrant.
