A delightful combination of flavors, this Cajun Potato Soup brings warmth and comfort with a mix of tender potatoes, savory sausage, and creamy cheese.

Ingredients

  • 4 medium potatoes, diced
  • 1 pound andouille sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the sliced andouille sausage and cook until browned.
  2. Toss in the chopped onion, minced garlic, bell pepper, and carrots. Sauté until softened and fragrant.
  3. Add the diced potatoes and pour in the chicken broth. Bring to a boil, then simmer until the potatoes are tender, about 15-20 minutes.
  4. Stir in the Cajun seasoning, heavy cream, and shredded cheddar cheese. Cook until the cheese melts and the soup is creamy.
  5. Season with salt and pepper to taste and serve hot.

Notes

Garnish with fresh herbs and serve with crusty bread. For additional flavor, add frozen corn or swap heavy cream with coconut milk.
