A warm and hearty Cajun potato soup with spicy sausage and a mix of vegetables, perfect for chilly nights.

  • 1 tablespoon vegetable oil
  • 1 ring (13.5 ounces) andouille sausage, sliced into ¼-inch rounds
  • 1 large onion, diced (about 1 cup)
  • ½ cup diced celery (about 1 rib)
  • ½ red bell pepper, seeded and diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream
  • 1 cup mild cheddar cheese, shredded
  • Parsley, chopped for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the sausage and cook until it starts to brown.
  2. Stir in the onion, celery, and bell pepper. Cook until the vegetables are soft.
  3. Add the garlic and cook for one more minute.
  4. Mix in the Cajun seasoning, salt, black pepper, paprika, and cayenne pepper. Stir well to combine.
  5. Pour in the chicken broth and add the cubed potatoes. Bring the soup to a boil, then lower the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  6. Once the potatoes are soft, stir in the heavy cream and cheddar cheese. Mix until the cheese has melted.
  7. Taste and adjust seasoning if needed. Garnish with chopped parsley before serving.

Notes

For a thicker soup, mash some of the potatoes before adding the cream. Adjust seasoning based on your spice preference.
