Cozy and sophisticated dessert bars featuring a chocolatey graham crust and a creamy filling with cinnamon-spiced apples and caramel drizzled on top.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups chopped apples (about 2 medium apples)
  • 1 cup caramel sauce
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment if desired.
  2. Combine graham cracker crumbs, cocoa powder, and melted butter in a bowl, then press firmly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat the softened cream cheese and sugar until smooth. Scrape the sides of the bowl as needed.
  4. Add vanilla extract and eggs one at a time, mixing well after each addition.
  5. Fold in chopped apples, cinnamon, and nutmeg with a spatula.
  6. Pour the cheesecake mixture over the crust and drizzle caramel on top, swirling if desired.
  7. Bake for 40–45 minutes, until edges are set and center jiggles slightly.
  8. Let cool to room temperature, then refrigerate for at least 2 hours before slicing into bars.

Notes

Serve chilled, with warmed caramel drizzle and a light sprinkle of flaky sea salt on top.
