Delicious crispy bites made from mashed potatoes and cheese, perfect for snacking or appetizers.

  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the mashed potatoes, shredded cheese, breadcrumbs, eggs, green onions, salt, and pepper until everything is well combined.
  3. Shape the mixture into small puffs or balls and place them on a baking sheet lined with parchment paper.
  4. Heat oil in a frying pan over medium heat.
  5. Fry the potato puffs in batches until golden brown, about 3-4 minutes on each side.
  6. Once fried, remove them from the oil and place on paper towels to drain any excess oil.
  7. Serve warm as an irresistible snack or tasty appetizer.
