A quick and easy skillet dinner featuring seasoned beef, beans, corn, and melted cheese, perfect for busy weeknights.

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups ready rice (microwaveable rice works well)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup water
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Heat a large skillet over medium. Add the ground beef and cook, breaking it up with a spatula, until no pink remains and the meat is browned. Drain excess fat.
  2. Sprinkle the taco seasoning over the beef, pour in 1 cup water, and stir to combine so the seasoning dissolves and coats the meat.
  3. Stir in the drained black beans, drained corn, and ready rice. Mix until evenly distributed.
  4. Bring the mixture to a gentle simmer and cook for about 5 minutes so the rice and beans absorb the seasoned liquid and everything is heated through.
  5. Evenly sprinkle the shredded cheese over the top. Cover the skillet and let sit for 3 to 5 minutes, until the cheese is melted and gooey.
  6. Taste and adjust with salt and pepper. Garnish with chopped cilantro if using, then serve while hot.

Notes

Use ground turkey or plant-based crumbles for a lighter or vegetarian option. For a nuttier texture, swap ready white rice for ready brown rice. Use low sodium canned beans to reduce salt; adjust the taco seasoning accordingly.
