Deliciously chewy gingerbread cookies with a rich molasses flavor and warm spices, perfect for the holiday season.

Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the butter and brown sugar until smooth. Stir in the molasses, egg, and vanilla until well combined.
  4. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
  5. Roll the dough into small balls and then roll each ball in sugar. Place them on the prepared baking sheets.
  6. Bake for 8-10 minutes, or until the edges are firm. Let them cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
