A creamy avocado chicken sandwich with gooey cheese, perfect for a quick, satisfying meal.

Ingredients

  • 2 cooked chicken breasts, shredded
  • 1 ripe avocado
  • 4 slices cheese (e.g., cheddar, Monterey Jack, provolone, or pepper jack)
  • 4 slices bread (e.g., sourdough, country white, or multigrain)
  • Salt and freshly ground black pepper to taste
  • Butter for toasting (about 1 tablespoon)

Instructions

  1. Mash the avocado in a bowl with salt and pepper until mostly smooth with a few chunks for texture.
  2. Spread the mashed avocado on two slices of bread.
  3. Distribute the shredded chicken evenly on top of the avocado layer.
  4. Place a slice of cheese on top of the chicken for each sandwich.
  5. Close the sandwiches with the remaining slices of bread and press gently.
  6. Heat a skillet over medium heat and add butter until foaming.
  7. Add the sandwiches to the skillet and cook for 3 to 4 minutes per side until golden brown and the cheese is melted.
  8. Remove from the skillet, let rest, then cut and serve warm.

Notes

For a lighter version, use low-fat cheese and whole grain bread. For dairy-free options, use plant-based cheese and olive oil instead of butter.
