A comforting and satisfying dish of tender chicken, silky noodles, and rich garlic butter sauce, perfect for busy weeknights.

  • 2 boneless, skinless chicken breasts
  • 8 oz (about 225g) egg noodles or any pasta you prefer
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • 1 teaspoon dried parsley (or fresh parsley for garnish)
  • 1 tablespoon olive oil
  • 1 cup chicken broth (preferably low-sodium)
  • ½ cup heavy cream
  • Salt and black pepper, to taste
  • Optional: Grated parmesan cheese for topping
  • Optional: Red pepper flakes for added spice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season both sides of the chicken breasts with salt, black pepper, and dried thyme.
  2. Add the chicken to the hot skillet and cook for about 5-6 minutes per side until golden brown and cooked through. Remove from the pan and let rest before slicing into thin strips.
  3. Meanwhile, boil a large pot of salted water. Add the egg noodles and cook according to package instructions until al dente. Drain, keeping about ½ cup of pasta cooking water.
  4. In the same skillet, reduce the heat to medium and melt the butter. Scrape any bits from the bottom of the pan for added flavor.
  5. Add minced garlic to the melted butter and sauté for about a minute until fragrant, being careful not to burn it.
  6. Pour in the chicken broth and bring it to a simmer for 3-4 minutes. Stir in the heavy cream and simmer for an additional 3-4 minutes until thickened slightly.
  7. Add the drained noodles to the skillet, tossing gently until well-coated in the sauce. Add a bit of reserved pasta water if needed to achieve your desired consistency.
  8. Return the sliced chicken to the skillet and mix everything together, allowing the chicken to soak up the flavors of the sauce.
  9. Taste and adjust seasoning with salt and pepper. Sprinkle parsley over the top, and add red pepper flakes for some heat if desired.
  10. Serve hot, topped with freshly grated parmesan cheese if you like!

Notes

For maximum flavor, use fresh herbs when possible. You can also customize the dish by using different proteins or adding seasonal vegetables.
