  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Gather all your ingredients and chop the vegetables into bite-sized pieces for even cooking.
  2. Cook the lo Mein noodles according to the package instructions until al dente, then drain and set aside.
  3. In a large skillet or wok, heat up some oil over medium-high heat. Once hot, sauté the chicken pieces until golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  4. In the same pan, add the sliced bell peppers, carrots, and green onions. Stir-fry until tender yet still crisp, around 3-4 minutes.
  5. Return the cooked chicken to the skillet with the vegetables. Add the lo Mein noodles, soy sauce, sesame oil, and minced garlic. Stir everything until well combined.
  6. Serve hot, drizzling extra soy sauce if desired.

Notes

Use a high-quality soy sauce for better flavor. Prepping ingredients beforehand makes cooking easier.
