A warm, comforting soup that combines the flavors of chicken pot pie with a hearty broth, loaded with tender chicken and fresh vegetables.

  • 1 lb chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup milk
  • 1/4 cup flour
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Biscuits for serving

Instructions

  1. In a large pot or Crock Pot, melt the butter and sauté the onion, carrots, and celery until softened.
  2. Add the diced chicken and cook until browned.
  3. Stir in the flour and cook for 1-2 minutes.
  4. Gradually add the chicken broth, stirring continuously until thickened.
  5. Add potatoes, peas, salt, and pepper.
  6. Simmer for 20-30 minutes until vegetables are tender.
  7. Stir in the milk just before serving.
  8. Serve hot with biscuits.

Notes

Use fresh vegetables for enhanced flavor and texture. For a thicker soup, adjust the amount of flour to your liking.
