  • 8 corn tortillas
  • 1 onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Marinade: 1/4 cup lime juice, 2 cloves garlic (minced), 1 tsp cumin, 1 tsp chili powder, 1 tsp salt

Instructions

  1. Marinate the chicken in a mixture of lime juice, minced garlic, cumin, chili powder, and salt for at least 30 minutes.
  2. Preheat the grill and cook the marinated chicken for 6-7 minutes on each side until cooked through.
  3. Let the chicken rest for a few minutes, then slice or shred it.
  4. Warm the corn tortillas on the grill or in a skillet until pliable.
  5. Assemble the tacos by placing grilled chicken in the tortillas, topping with diced onion, cilantro, and a squeeze of lime. Serve immediately.
