Honey BBQ Chicken with Garlic Parmesan Potatoes

A no-fuss, crowd-pleasing meal with grilled chicken glazed in honey BBQ and crispy garlic Parmesan potatoes.

  • 4 boneless, skinless chicken breasts
  • 1 cup Honey BBQ sauce
  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your grill to medium heat. Clean and oil the grates.
  2. Pat the chicken breasts dry. Season both sides with salt and pepper. Brush each breast with a generous layer of Honey BBQ sauce.
  3. Place the chicken on the grill. Cook 6 to 7 minutes per side, basting with extra BBQ sauce halfway through. Use a meat thermometer to confirm an internal temperature of 165F.
  4. While the chicken grills, preheat your oven to 400F (200C).
  5. In a baking dish, toss the baby potatoes with olive oil, garlic powder, Parmesan, salt, and pepper until evenly coated. Spread them in a single layer.
  6. Bake the potatoes for 25 to 30 minutes. They should be tender when pierced with a fork and golden on the edges. Give them a quick stir halfway through for even browning.
  7. Let the chicken rest for 3 to 5 minutes after grilling. Serve the breasts alongside the cheesy garlic Parmesan potatoes and sprinkle with chopped fresh parsley.

Notes

For a dairy-free version, skip the Parmesan or swap with nutritional yeast. Adjust salt for low sodium versions. If potatoes are larger, halve them for even roasting.
