A rich and satisfying chili combining tender beef short ribs and flavorful chorizo, perfect for gatherings or cozy dinners.

Ingredients

  • Beef short ribs
  • Mexican chorizo
  • Fire-roasted tomatoes (canned)
  • Onion
  • Garlic
  • Beef broth
  • Ground cumin
  • Chili powder
  • Salt
  • Black pepper
  • Kidney beans (canned)
  • Bell peppers

Instructions

  1. In a large pot, heat a bit of oil over medium heat and brown the beef short ribs, then set them aside.
  2. In the same pot, add the Mexican chorizo and cook it until browned and aromatic.
  3. Stir in the chopped onion and bell peppers, cooking until softened.
  4. Add the minced garlic and let it cook for another minute until fragrant.
  5. Pour in the fire-roasted tomatoes, beef broth, cumin, chili powder, salt, and pepper.
  6. Return the short ribs to the pot, bringing everything to a simmer.
  7. Cover and let it cook on low heat for 2-3 hours, until the meat is tender and flavorful.
  8. Add the kidney beans during the last 30 minutes of cooking.
  9. Taste and adjust the seasoning to your preference before serving it hot.

Notes

For best flavor, brown the short ribs well and consider letting it simmer longer for deeper flavor. Make a day ahead for flavors to meld beautifully.
