Chocolate Chip Cookie Dough Cups

Delicious no-bake treats combining rich chocolate and sweet cookie dough, perfect for any occasion.

Ingredients

  • 1 and 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (heat-treated)
  • 2 tablespoons milk
  • 1/2 cup mini chocolate chips
  • 1/4 teaspoon salt

Instructions

  1. Melt 1 and 1/2 cups of semi-sweet chocolate chips with 1 tablespoon of coconut oil in a microwave-safe bowl, heating in 20-second intervals and stirring until smooth.
  2. Spoon melted chocolate into the bottom of lined or silicone muffin cups and spread it slightly up the sides. Freeze for about 10 minutes to harden.
  3. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add vanilla extract, milk, and salt; mix until combined. Gradually stir in heat-treated flour to form a smooth dough, then fold in mini chocolate chips.
  5. Remove hardened chocolate shells from the freezer and spoon cookie dough into each cup, pressing gently to flatten.
  6. Melt remaining chocolate chips and coconut oil and spoon over the cookie dough layer, covering completely.
  7. Return to the freezer for 10 to 15 minutes or until solid.
  8. Remove from molds and store in an airtight container in the refrigerator until serving.

Notes

Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months.
