Chocolate Covered Strawberries

Delicious chocolate covered strawberries that are easy to make and perfect for any occasion.

  • 2 pounds fresh strawberries
  • 12 ounces high-quality chocolate bars (finely chopped, dark, semi-sweet, milk, or white chocolate)

Instructions

  1. Line a large baking sheet with paper towels. Set aside.
  2. Wash the strawberries thoroughly and pat them dry. Allow them to dry at room temperature for 1-2 hours.
  3. Add ⅔ of the chopped chocolate to a large microwave-safe bowl and microwave in 20-30 second increments at 50% power until melted and smooth, ensuring it doesn’t exceed 115ºF for dark or semi-sweet chocolate, or 110ºF for milk or white chocolate.
  4. Alternatively, melt the chocolate over simmering water without letting water touch the bowl.
  5. Slowly add the remaining chopped chocolate to the melted chocolate, stirring until fully melted, aiming for a dipping temperature of 89-90°F for dark chocolate and 87°F for milk or white chocolate.
  6. Line two baking sheets with parchment paper. Set aside.
  7. Dip each strawberry into the chocolate, coating most of it, and let excess chocolate drip off before placing it on the parchment-lined sheet.
  8. Repeat with remaining strawberries, reheating chocolate if necessary.
  9. Optionally, drizzle leftover chocolate over dipped strawberries with a piping bag.
  10. Allow the strawberries to set at room temperature for 15-20 minutes.

Notes

Ensure strawberries are completely dry for the chocolate to stick well. Experiment with different types of chocolate and toppings for variety.
