  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup heavy cream
  • ½ cup cocoa powder
  • 3 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together chocolate graham cracker crumbs, melted butter, and sugar until well combined.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat softened cream cheese until smooth.
  5. Add sour cream and heavy cream; mix until creamy.
  6. Gradually add cocoa powder and granulated sugar until fully combined.
  7. Incorporate eggs one at a time on low speed, ensuring each is mixed before adding the next.
  8. Pour the filling into the prepared crust and bake for 55-65 minutes until slightly jiggly in the center.
  9. Turn off the oven and let cool inside with the door ajar for one hour.
  10. For the ganache, heat heavy cream until simmering, pour over chopped dark chocolate, let sit for five minutes, then stir until smooth.
  11. Spread ganache over cooled cheesecake and refrigerate for at least four hours or overnight before slicing and serving chilled.

For the best texture, use room temperature ingredients. Avoid overmixing to prevent a dense cheesecake. Let the ganache cool slightly before pouring to maintain the filling’s integrity.
