1 1/2 cups chopped strawberries
1 cup plain Greek yogurt
1 tbsp honey
1 tsp vanilla extract
1 cup semi-sweet chocolate chips
2 tbsp coconut oil
Instructions
Add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract to a large bowl. Combine thoroughly.
Add scoops of the yogurt mixture (about 2 tbsp) to a parchment paper-lined baking sheet to form the clusters.
Place the baking sheet with the yogurt clusters in the freezer. Freeze until solid, about 1-2 hours.
Once frozen, melt the chocolate by combining the chocolate chips and coconut oil in a microwave-safe bowl and microwaving in 15-30 second intervals, stirring in between.
Remove the yogurt clusters from the freezer and dip each one into the melted chocolate.
Return each coated cluster to the baking sheet and sprinkle with sea salt if desired.
Place back in the freezer for a few minutes to harden.
Notes
Store in an airtight container in the freezer for up to two weeks. Use ripe strawberries for best flavor.
