A delightful twist on traditional zucchini bread that combines grated zucchini with cocoa for a moist and rich treat perfect for any time of day.

  • 2 medium zucchinis, grated
  • 1 ½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. Grate the zucchinis and squeeze out excess moisture with a clean kitchen towel.
  3. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. In another bowl, beat eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
  5. Fold the wet ingredients into the dry ingredients until just combined; then gently fold in the grated zucchini.
  6. Pour the batter into the prepared pan and bake for 50-60 minutes until a toothpick comes out clean. Let cool before slicing.

Notes

For best results, remove excess moisture from the zucchini and allow the bread to cool before slicing for neat pieces.
