Churro Pancakes are a delicious twist on traditional pancakes, combining fluffy pancake goodness with a sweet, cinnamon flavor reminiscent of churros.

Ingredients

  • Pancake Mix (plus the ingredients the mix calls for)
  • 1 cup Sugar
  • 2 tablespoons Cinnamon
  • Oil
  • 1/2 of a 14 oz can of Condensed Milk
  • 1 1/2 cups Semi-sweet Chocolate Chips

Instructions

  1. Prepare your pancake mix as instructed on the box.
  2. Heat up your skillet and pour about 3/4 cup of batter onto a hot and greased skillet.
  3. Once the top of your pancake begins to bubble, flip it, and finish cooking until both sides are golden.
  4. Place about 1/4 inch of oil into the bottom of your skillet.
  5. In a large bowl, mix the cinnamon and sugar together.
  6. Fry the prepared pancake in the hot oil on each side for less than 30 seconds.
  7. Remove from the hot oil and coat in the cinnamon and sugar mixture.
  8. In a microwave-safe bowl, combine condensed milk and chocolate chips.
  9. Microwave at 30-second intervals until completely melted and smooth, stirring after each interval.
  10. Pour melted chocolate over your stack of pancakes.
  11. Serve warm and enjoy!

Notes

For best results, ensure your oil is hot enough before frying. Serve fresh for optimal flavor. Experiment with toppings like caramel or fruit.
