A delightful twist on classic cinnamon rolls, these cookies combine a soft, buttery texture with warm cinnamon flavors.

  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, cream the softened butter with the granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually add the dry ingredients, stirring until just combined.
  6. For the filling, mix the brown sugar and cinnamon in a small bowl.
  7. Spread half of the dough onto a parchment paper sheet, sprinkle with the cinnamon mixture, and roll it up tightly.
  8. Slice into rounds and place the cookies on a prepared baking sheet lined with parchment paper.
  9. Bake for about 10 to 12 minutes or until golden brown.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
