Chewy and cinnamon kissed blondies that are easy to make and perfect for any occasion.

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar for topping, mixed with a pinch of cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9 by 13 inch baking pan or line it with parchment for easy removal.
  2. In a large bowl, whisk together the melted butter, brown sugar, and 1/2 cup granulated sugar until smooth and glossy.
  3. Add the eggs one at a time, stirring until each is incorporated. Mix in the vanilla until uniform.
  4. In a separate bowl, whisk the flour, baking powder, salt, and cinnamon until evenly distributed.
  5. Fold the dry ingredients into the wet mixture in two additions. Stir until just combined; do not overmix.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Combine the 1/4 cup granulated sugar with a little extra cinnamon and sprinkle evenly over the batter.
  8. Bake for 20 to 25 minutes, or until the top is set and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the blondies cool completely in the pan on a wire rack before cutting into squares to maintain clean edges.

Notes

For a nut free version keep all ingredients as listed. To make gluten free, swap in a 1 to 1 gluten free baking flour. Brown sugar is crucial for the caramel flavor.
