  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 12 oz penne, fettuccine, or spaghetti
  • Salt for the pasta water
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning (additional)
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Fresh lemon juice
  • Sautéed vegetables (optional)
  • Shrimp (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Remove and slice them once rested.
  2. Cook the Pasta: While the chicken cooks, bring a large pot of salted water to a boil. Add your pasta and cook according to package directions until al dente. Drain and set aside.
  3. Make the Cajun Cream Sauce: In the same skillet, melt the butter and add minced garlic, sautéing until fragrant. Sprinkle in the additional Cajun seasoning and smoked paprika, stirring to combine. Pour in the heavy cream and chicken broth, whisking until smooth. Allow the sauce to simmer gently before mixing in the Parmesan cheese.
  4. Combine the Pasta, Chicken, and Sauce: Toss the cooked pasta and chicken into the sauce, mixing until everything is well-coated and heated through.

Notes

For a lighter version, substitute heavy cream with Greek yogurt and chicken broth. Store leftovers in an airtight container for up to 3 days.
