A heartfelt and comforting creamy chicken soup, perfect for chilly evenings and family gatherings.

  • 2 cups cooked chicken, shredded
  • 1 cup egg noodles
  • 2 cups carrots, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Sauté the diced onion and minced garlic until they’re soft and fragrant, about 3-5 minutes.
  2. Add the diced carrots to the pot, then pour in the chicken broth. Bring the mixture to a boil.
  3. Stir in the egg noodles and cook them according to the package instructions until they’re tender.
  4. Once the noodles are cooked, reduce the heat and add the shredded chicken and heavy cream. Let it simmer for about 10 minutes to meld those delicious flavors.
  5. Season with salt and pepper to taste before serving.
  6. Ladle the soup into bowls and garnish with fresh parsley.

Notes

For a kick, consider adding a pinch of cayenne pepper or a splash of hot sauce. You can also make it vegetarian by using vegetable broth and adding beans or lentils.
