One-Pot Creamy Spicy Cajun Sausage Pasta

This creamy, spicy Cajun sausage pasta is a quick and comforting dish that can be made in under 30 minutes, perfect for weeknight dinners.

Ingredients

  • 1 lb smoked sausage, sliced
  • 12 oz penne pasta
  • 2 cups chicken broth (low sodium if desired)
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the sliced smoked sausage, diced onion, and diced bell pepper. Cook, stirring occasionally, until the sausage is browned and the vegetables have softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for one minute, until fragrant.
  4. Pour in the diced tomatoes, 2 cups chicken broth, and 1 cup heavy cream. Add 1 tablespoon Cajun seasoning, 1 teaspoon paprika, and salt and pepper to taste. Increase heat and bring the mixture to a boil.
  5. Add the uncooked 12 ounces of penne pasta to the pot. Reduce the heat to low and simmer gently, stirring occasionally, until the penne is tender, about 10 to 12 minutes.
  6. Remove the pot from the heat. Stir in 1 cup grated Parmesan cheese until the sauce becomes creamy and the cheese melts. Taste and adjust seasoning before serving.

Notes

For a lighter sauce, substitute heavy cream with a mixture of whole milk and cornstarch. To reduce spice, halve the Cajun seasoning.
