  • 4 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Stir in carrots, celery, zucchini, and bell pepper, cooking for about 5-7 minutes until softened.
  3. Pour in vegetable broth and bring to a simmer. Cook for 15 minutes.
  4. Add the heavy cream and shredded cheese, stirring until the cheese is melted and the soup is creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs if desired.
