A simple yet impressive dish featuring a crunchy Parmesan crust on tender salmon.

Ingredients

  • 4 salmon fillets (about 6 ounces each), skin-on or skinless
  • 1 cup grated Parmesan cheese
  • 1/2 cup plain breadcrumbs (Panko for extra crunch)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Combine the grated Parmesan, breadcrumbs, garlic powder, paprika, and a pinch of salt and pepper in a medium bowl. Stir until evenly mixed.
  3. Pat the salmon fillets dry with paper towels and place them skin-side down on the prepared sheet.
  4. Brush the top of each fillet with olive oil to help the crust brown and stick.
  5. Press the Parmesan mixture firmly onto the top of each fillet, covering evenly.
  6. Bake for 12 to 15 minutes, depending on thickness. The crust should be golden and the fish should flake easily with a fork.
  7. Let the fillets rest for a minute, then serve immediately with lemon wedges for squeezing over the top.

Notes

For a sharper flavor, use Pecorino Romano. Substitute breadcrumbs with crushed cornflakes or gluten-free crumbs for a gluten-free option.
